Kombucha
A fizzy, sweet-and-sour drink made with tea and a symbiotic culture of bacteria and yeast (SCOBY).
Ingredients - Serves 8
- Kombucha scoby - 1
- Kombucha from a previous batch - 2 cups
- Black tea bags - 8
- White sugar - 1 cup
- Water - 14 cups
Let's Get Started
- Bring the water to a boil in a large pot.
- Once the water is boiling, remove from heat and stir in the sugar until it is fully dissolved.
- Add the tea bags and allow them to steep until the water has cooled. This may take a few hours.
- Once the tea is cool, remove the tea bags and stir in the kombucha from a previous batch.
- Pour the mixture into a large glass jar and gently add the SCOBY.
- Cover the jar with a cloth or coffee filter and secure with a rubber band.
- Allow the kombucha to ferment at room temperature for 7-10 days.
- After it's fermented to your liking, remove the SCOBY and reserve it for your next batch. Pour the kombucha into bottles and refrigerate.
