  2. In a large mixing bowl, combine the whole wheat flour, all-purpose flour, and salt.
  3. Gradually add the water and olive oil to the flour mixture, stirring until a dough forms.
  4. Knead the dough on a lightly floured surface for a few minutes until smooth and elastic.
  5. Divide the dough into 4 equal portions.
  6. Roll out each portion of dough into a thin rectangle, about 1/8 inch (3 mm) thick.
  7. Transfer the rolled-out dough onto baking sheets lined with parchment paper.
  8. Sprinkle the sesame seeds and poppy seeds evenly over the dough.
  9. Using a fork, prick the dough all over to prevent it from puffing up during baking.
  10. Bake in the preheated oven for 10-12 minutes, or until the knäckebröd is golden brown and crispy.
  11. Remove from the oven and let cool completely on wire racks.
