Kimchi Stew
This spicy and flavorful Korean stew is made with kimchi, tofu, and pork.
Ingredients - Serves 4
- Salt and pepper - To taste
- Green onions - 2 stalks, chopped
- Chicken or vegetable broth - 4 cups
- Sugar - 1 teaspoon
- Sesame oil - 1 tablespoon
- Soy sauce - 1 tablespoon
- Gochujang (korean red pepper paste) - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 medium, sliced
- Tofu - 1 block, cubed
- Pork belly - 8 ounces, thinly sliced
- Kimchi - 2 cups, chopped
Let's Get Started
- Heat a large pot over medium heat and add the pork belly. Cook until browned and crispy.
- Add the onion and garlic to the pot and sauté until softened.
- Add the kimchi, gochujang, soy sauce, sesame oil, and sugar. Stir well to combine.
- Pour in the chicken or vegetable broth and bring to a boil.
- Reduce the heat to low and simmer for 15 minutes.
- Add the tofu and green onions to the pot and simmer for an additional 5 minutes.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
