Kilawin
Kilawin is a Filipino dish made with raw fish or seafood marinated in vinegar and citrus juices.
Ingredients - Serves 4
- Cilantro - 1/4 cup, chopped
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Red chili pepper - 1 piece, thinly sliced
- Ginger - 1 tablespoon, minced
- Red onion - 1/2 cup, thinly sliced
- Calamansi juice - 1/4 cup
- Vinegar - 1/2 cup
- Fresh fish or seafood - 1 pound, thinly sliced
Let's Get Started
- In a bowl, combine the vinegar, calamansi juice, red onion, ginger, red chili pepper, salt, and black pepper.
- Add the thinly sliced fish or seafood to the bowl and mix well to ensure all pieces are coated in the marinade.
- Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld and the fish or seafood to 'cook' in the acid.
- Before serving, garnish with chopped cilantro.
- Serve chilled as an appetizer or as a main dish with steamed rice.
