Khoresh E Karafs

Ingredients - Serves 4
- Water - 2 cups
- Vegetable oil - 2 tablespoons
- Salt and pepper - To taste
- Cinnamon - 1/2 teaspoon
- Turmeric - 1 teaspoon
- Dried mint - 1 tablespoon
- Lemon juice - 2 tablespoons
- Tomato paste - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 large, finely chopped
- Beef or lamb - 500 grams, cubed
- Celery - 4 cups, chopped
Let's Get Started
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and minced garlic. Sauté until golden brown.
- Add the cubed meat and cook until browned on all sides.
- Stir in the tomato paste, turmeric, cinnamon, salt, and pepper. Cook for a few minutes until fragrant.
- Add the chopped celery and water. Bring to a boil, then reduce the heat and simmer for about 45 minutes to 1 hour, or until the meat is tender.
- Stir in the dried mint and lemon juice. Cook for an additional 5 minutes.
- Taste and adjust the seasoning if needed.
- Serve the Khoresh-e Karafs hot with steamed rice.
