Let's Get Started

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until golden brown.
  3. Add the chicken pieces and cook until browned on all sides.
  4. Add the ground walnuts, pomegranate molasses, sugar, salt, cinnamon, and turmeric. Stir well to combine.
  5. Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 1.5 hours, stirring occasionally.
  6. Add the saffron water and continue to simmer for another 30 minutes, or until the chicken is tender and the sauce has thickened.
  7. Taste and adjust the seasoning if needed.
  8. Serve the Khoresh-e Fesenjoon hot with steamed rice.
