Khoresh E Fesenjoon
Khoresh-e Fesenjoon is a traditional Persian dish made with ground walnuts, pomegranate molasses, and chicken.
Ingredients - Serves 4
- Saffron - 1/4 teaspoon, dissolved in 2 tablespoons hot water
- Water - 1 cup
- Ground turmeric - 1/2 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Sugar - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Onion - 1 large, finely chopped
- Pomegranate molasses - 1/2 cup
- Ground walnuts - 1 cup
- Chicken - 1.5 lbs, cut into pieces
Let's Get Started
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and sauté until golden brown.
- Add the chicken pieces and cook until browned on all sides.
- Add the ground walnuts, pomegranate molasses, sugar, salt, cinnamon, and turmeric. Stir well to combine.
- Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 1.5 hours, stirring occasionally.
- Add the saffron water and continue to simmer for another 30 minutes, or until the chicken is tender and the sauce has thickened.
- Taste and adjust the seasoning if needed.
- Serve the Khoresh-e Fesenjoon hot with steamed rice.
