  1. Heat a large pot over medium heat and add olive oil.
  2. Add the chicken breasts and cook until browned on both sides. Remove from the pot and set aside.
  3. In the same pot, add the bell peppers, onion, and garlic. Cook until the vegetables are softened.
  4. Add the diced tomatoes, chicken broth, cumin, chili powder, paprika, salt, and pepper. Stir to combine.
  5. Return the chicken breasts to the pot and bring the soup to a boil. Reduce the heat and simmer for 20 minutes, or until the chicken is cooked through.
  6. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  7. Serve the soup hot, garnished with sliced avocado, chopped cilantro, and lime wedges.
