Keto Chicken Fajita Soup
This keto-friendly chicken fajita soup is packed with flavor and low in carbs.
Ingredients - Serves 6
- Lime wedges - For serving
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
- Avocado - 1, sliced (for garnish)
- Salt and pepper - To taste
- Paprika - 1 teaspoon
- Chili powder - 1 teaspoon
- Cumin - 1 teaspoon
- Chicken broth - 4 cups
- Canned diced tomatoes - 1 can (14 oz)
- Garlic - 3 cloves, minced
- Onion - 1, thinly sliced
- Bell peppers - 2, thinly sliced
- Chicken breasts - 2, boneless and skinless
Let's Get Started
- Heat a large pot over medium heat and add olive oil.
- Add the chicken breasts and cook until browned on both sides. Remove from the pot and set aside.
- In the same pot, add the bell peppers, onion, and garlic. Cook until the vegetables are softened.
- Add the diced tomatoes, chicken broth, cumin, chili powder, paprika, salt, and pepper. Stir to combine.
- Return the chicken breasts to the pot and bring the soup to a boil. Reduce the heat and simmer for 20 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
- Serve the soup hot, garnished with sliced avocado, chopped cilantro, and lime wedges.
