Karim’s Biryani
A flavorful and aromatic dish, Karim's Biryani is a delightful blend of rice, meat, and spices.
Ingredients - Serves 6
- Saffron strands - a few, soaked in 2 tablespoons warm milk
- Fresh mint leaves - a handful, chopped
- Fresh coriander leaves - a handful, chopped
- Ghee - 3 tablespoons
- Salt - to taste
- Red chilli powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Biryani masala - 2 tablespoons
- Ginger-garlic paste - 2 tablespoons
- Green chillies - 2, slit
- Tomatoes - 2, finely chopped
- Onions - 2, finely chopped
- Chicken - 500 grams
- Basmati rice - 2 cups
Let's Get Started
- Wash the basmati rice and soak it in water for 30 minutes.
- Heat ghee in a pan and add the chopped onions. Fry until they turn golden brown.
- Add the ginger-garlic paste and green chillies. Saute for a few minutes.
- Add the chopped tomatoes and cook until they turn mushy.
- Add the chicken pieces to the pan and cook until they turn white.
- Add the biryani masala, turmeric powder, red chilli powder, and salt. Mix well and cook for a few minutes.
- Drain the rice and add it to the pan. Mix well with the spices and cook for a few minutes.
- Add enough water to the pan and bring it to a boil. Cover the pan and cook on low heat until the rice is cooked and the water is absorbed.
- Sprinkle the chopped coriander leaves, mint leaves, and saffron milk over the biryani. Cover the pan and cook on low heat for a few more minutes.
- Serve the biryani hot with raita or any side dish of your choice.
