It's It Ice Cream Sandwich

Ingredients - Serves 8

Let's Get Started

  1. Place 8 of the oatmeal cookies bottom side up on a baking sheet lined with parchment paper.
  2. Top each cookie with a scoop of vanilla ice cream, then place another cookie on top to form a sandwich. Press down gently to secure the cookies together.
  3. Place the baking sheet in the freezer and freeze the ice cream sandwiches for at least 2 hours, or until the ice cream is very firm.
  4. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring after each interval, until the chocolate is melted and smooth.
  5. Remove the ice cream sandwiches from the freezer. Using a fork or tongs, dip each sandwich into the melted chocolate, turning to coat all sides.
  6. Return the dipped sandwiches to the baking sheet and freeze for another 30 minutes, or until the chocolate is set.
  7. Serve the It's-It Ice Cream Sandwiches immediately, or wrap each one in plastic wrap and store in the freezer for up to 1 month.
