It's It Ice Cream Sandwich
A homemade version of the classic San Francisco treat, the It's-It Ice Cream Sandwich. Vanilla ice cream sandwiched between two oatmeal cookies and dipped in chocolate.
Ingredients - Serves 8
- Coconut oil - 2 tablespoons
- Semi-sweet chocolate chips - 2 cups
- Vanilla ice cream - 1 quart
- Oatmeal cookies - 16 cookies
Let's Get Started
- Place 8 of the oatmeal cookies bottom side up on a baking sheet lined with parchment paper.
- Top each cookie with a scoop of vanilla ice cream, then place another cookie on top to form a sandwich. Press down gently to secure the cookies together.
- Place the baking sheet in the freezer and freeze the ice cream sandwiches for at least 2 hours, or until the ice cream is very firm.
- In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring after each interval, until the chocolate is melted and smooth.
- Remove the ice cream sandwiches from the freezer. Using a fork or tongs, dip each sandwich into the melted chocolate, turning to coat all sides.
- Return the dipped sandwiches to the baking sheet and freeze for another 30 minutes, or until the chocolate is set.
- Serve the It's-It Ice Cream Sandwiches immediately, or wrap each one in plastic wrap and store in the freezer for up to 1 month.
