Irish Potato Pancakes
These traditional Irish potato pancakes, also known as boxty, are made from both raw and cooked potatoes and served with a dollop of sour cream.

- Sour cream - For serving
- Butter - 2 tablespoons
- Salt and pepper - To taste
- Egg - 1, beaten
- All-purpose flour - 1/2 cup
- Boiled potatoes - 2, mashed
- Russet potatoes - 2 large, peeled and grated
Let's Get Started
- Combine the grated and mashed potatoes in a large bowl.
- Add the flour, egg, salt, and pepper and mix until well combined.
- Heat the butter in a large skillet over medium heat.
- Drop spoonfuls of the potato mixture into the skillet and flatten with a spatula.
- Cook for 3-4 minutes on each side, or until golden brown.
- Serve the pancakes warm with a dollop of sour cream.
