Let's Get Started

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop rounded tablespoons of dough onto a baking sheet, spacing them about 2 inches apart.
  7. Bake for 8-10 minutes, or until the edges are golden brown.
  8. Remove from the oven and let the cookies cool completely on a wire rack.
  9. Once the cookies are cooled, scoop a generous amount of ice cream onto the bottom side of one cookie.
  10. Place another cookie on top, pressing gently to create a sandwich.
  11. Repeat with the remaining cookies and ice cream.
  12. Serve immediately or wrap each sandwich in plastic wrap and freeze for later enjoyment.
