Ice Cream Cookie Sandwiches
Delicious homemade ice cream sandwiched between two soft and chewy cookies.
Ingredients - Serves 6
- Ice cream - 2 cups, any flavor
- Vanilla extract - 1 teaspoon
- Egg - 1
- Brown sugar - 1/2 cup, packed
- Granulated sugar - 1 cup
- Unsalted butter - 1 cup, softened
- Salt - 1/4 teaspoon
- Baking soda - 1/2 teaspoon
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop rounded tablespoons of dough onto a baking sheet, spacing them about 2 inches apart.
- Bake for 8-10 minutes, or until the edges are golden brown.
- Remove from the oven and let the cookies cool completely on a wire rack.
- Once the cookies are cooled, scoop a generous amount of ice cream onto the bottom side of one cookie.
- Place another cookie on top, pressing gently to create a sandwich.
- Repeat with the remaining cookies and ice cream.
- Serve immediately or wrap each sandwich in plastic wrap and freeze for later enjoyment.
