Groundnut Soup
This delicious West African groundnut soup is made with peanuts, vegetables, and flavorful spices.
Ingredients - Serves 6
- Fresh cilantro - For garnish
- Coconut milk - 1 cup
- Salt - To taste
- Cayenne pepper - 1/2 teaspoon
- Curry powder - 1 tablespoon
- Vegetable broth - 4 cups
- Sweet potato - 1, peeled and diced
- Carrot - 1, chopped
- Red bell pepper - 1, chopped
- Tomato paste - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Peanuts - 1 cup, roasted and unsalted
Let's Get Started
- In a blender or food processor, grind the roasted peanuts until smooth to make peanut butter.
- In a large pot, heat some oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant.
- Add the tomato paste, chopped red bell pepper, chopped carrot, and diced sweet potato. Cook for a few minutes until the vegetables start to soften.
- Stir in the peanut butter, vegetable broth, curry powder, cayenne pepper, and salt. Bring to a boil, then reduce the heat and simmer for about 30 minutes, or until the vegetables are tender.
- Using an immersion blender or transferring the soup to a blender, blend until smooth and creamy.
- Stir in the coconut milk and simmer for an additional 5 minutes.
- Serve the groundnut soup hot, garnished with fresh cilantro leaves.
