Let's Get Started

  1. In a blender or food processor, grind the roasted peanuts until smooth to make peanut butter.
  2. In a large pot, heat some oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant.
  3. Add the tomato paste, chopped red bell pepper, chopped carrot, and diced sweet potato. Cook for a few minutes until the vegetables start to soften.
  4. Stir in the peanut butter, vegetable broth, curry powder, cayenne pepper, and salt. Bring to a boil, then reduce the heat and simmer for about 30 minutes, or until the vegetables are tender.
  5. Using an immersion blender or transferring the soup to a blender, blend until smooth and creamy.
  6. Stir in the coconut milk and simmer for an additional 5 minutes.
  7. Serve the groundnut soup hot, garnished with fresh cilantro leaves.
