Green Beans with Anchovy Butter

Ingredients - Serves 4

  1. Bring a large pot of salted water to a boil. Add the green beans and cook until tender, about 5 minutes. Drain and set aside.
  2. In a large skillet, melt the butter over medium heat. Add the anchovies and garlic and cook until the anchovies have dissolved into the butter, about 2 minutes.
  3. Add the cooked green beans to the skillet and toss to coat in the anchovy butter. Cook for 2-3 minutes, until the beans are heated through.
  4. Remove from heat and stir in the lemon zest. Season with salt and pepper to taste.
