Green Beans with Anchovy Butter
This is a simple yet flavorful side dish where the green beans are cooked until tender and then tossed in a delicious anchovy butter.
Ingredients - Serves 4
- Salt and pepper - To taste
- Lemon zest - 1 teaspoon
- Garlic - 2 cloves, minced
- Unsalted butter - 4 tablespoons
- Anchovy fillets - 4, finely chopped
- Green beans - 1 pound, trimmed
Let's Get Started
- Bring a large pot of salted water to a boil. Add the green beans and cook until tender, about 5 minutes. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the anchovies and garlic and cook until the anchovies have dissolved into the butter, about 2 minutes.
- Add the cooked green beans to the skillet and toss to coat in the anchovy butter. Cook for 2-3 minutes, until the beans are heated through.
- Remove from heat and stir in the lemon zest. Season with salt and pepper to taste.
