Green Bean and Cashew Stir Fry
This delicious stir fry combines crisp green beans, crunchy cashews, and a flavorful sauce.
Ingredients - Serves 4
- Black pepper - To taste
- Salt - To taste
- Water - 1/4 cup
- Cornstarch - 1 teaspoon
- Honey - 1 tablespoon
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 2 cloves, minced
- Cashews - 1/2 cup
- Green beans - 1 pound, trimmed and cut into bite-sized pieces
Let's Get Started
- In a small bowl, whisk together the soy sauce, sesame oil, honey, cornstarch, and water. Set aside.
- Heat a large skillet or wok over medium-high heat. Add the cashews and toast until golden brown, about 2 minutes. Remove from the skillet and set aside.
- In the same skillet, add a drizzle of oil if needed. Add the garlic and ginger and cook until fragrant, about 1 minute.
- Add the green beans to the skillet and stir fry for 5-7 minutes, until crisp-tender.
- Pour the sauce over the green beans and toss to coat. Cook for an additional 2 minutes, until the sauce has thickened.
- Season with salt and black pepper to taste.
- Remove from heat and sprinkle the toasted cashews over the stir fry.
- Serve hot as a side dish or over rice as a main course.
