Gluten Free Coconut Curry Lentil Soup
This flavorful and hearty lentil soup is made with coconut milk and a blend of aromatic spices.
Ingredients - Serves 6
- Fresh cilantro - For garnish
- Salt - To taste
- Lime juice - 2 tablespoons
- Coconut milk - 1 can (13.5 oz)
- Vegetable broth - 4 cups
- Cayenne pepper - 1/4 teaspoon
- Cumin - 1 teaspoon
- Turmeric - 1 teaspoon
- Curry powder - 2 teaspoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1, finely chopped
- Coconut oil - 2 tablespoons
- Red lentils - 1 cup

- Rinse the red lentils under cold water and set aside.
- In a large pot, heat the coconut oil over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent and fragrant.
- Add the curry powder, turmeric, cumin, and cayenne pepper. Stir well to coat the onions and spices.

- Stir in the lime juice and season with salt to taste.
