Gluten Free Coconut Curry Lentil Soup

  1. Rinse the red lentils under cold water and set aside.
  2. In a large pot, heat the coconut oil over medium heat.
  3. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent and fragrant.
  4. Add the curry powder, turmeric, cumin, and cayenne pepper. Stir well to coat the onions and spices.
