Let's Get Started

  1. Preheat the oven to 180°C (350°F) and grease a round cake tin.
  2. In a bowl, mix together the ground almonds and sugar.
  3. In another bowl, beat the eggs until they are frothy.
  4. Gradually add the almond and sugar mixture to the eggs, beating well after each addition.
  5. Stir in the lemon zest.
  6. Pour the mixture into the prepared cake tin.
  7. Bake for 40 minutes, or until a skewer inserted into the center of the cake comes out clean.
  8. Let the cake cool in the tin for 10 minutes, then turn it out onto a wire rack to cool completely.
  9. Before serving, dust the top of the cake with powdered sugar.
