Gató
Gató is a traditional almond cake from the Balearic Islands. It's a delicious dessert that's gluten-free and dairy-free.
Ingredients - Serves 8
- Powdered sugar - For dusting
- Lemon zest - 1 tablespoon
- Eggs - 4 large
- Sugar - 200 grams
- Almonds - 200 grams, ground
Let's Get Started
- Preheat the oven to 180°C (350°F) and grease a round cake tin.
- In a bowl, mix together the ground almonds and sugar.
- In another bowl, beat the eggs until they are frothy.
- Gradually add the almond and sugar mixture to the eggs, beating well after each addition.
- Stir in the lemon zest.
- Pour the mixture into the prepared cake tin.
- Bake for 40 minutes, or until a skewer inserted into the center of the cake comes out clean.
- Let the cake cool in the tin for 10 minutes, then turn it out onto a wire rack to cool completely.
- Before serving, dust the top of the cake with powdered sugar.
