Garlic and Zucchini Stuffed Mushrooms
These garlic and zucchini stuffed mushrooms are a delicious and healthy appetizer option.
Ingredients - Serves 6
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Parmesan cheese - 1/4 cup, grated
- Breadcrumbs - 1/2 cup
- Garlic - 3 cloves, minced
- Zucchini - 1 medium, grated
- Large mushrooms - 12
Let's Get Started
- Preheat the oven to 375°F.
- Remove the stems from the mushrooms and set aside.
- In a large bowl, combine the grated zucchini, minced garlic, breadcrumbs, Parmesan cheese, chopped parsley, olive oil, salt, and pepper.
- Stuff each mushroom cap with the zucchini mixture and place them on a baking sheet.
