Fricasé de Pollo
Fricasé de Pollo is a traditional Latin American chicken stew made with chicken, vegetables, and a flavorful tomato-based sauce.
Ingredients - Serves 6
- Cilantro - 1/4 cup, chopped
- Green olives - 1/2 cup, pitted
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Bay leaves - 2
- White wine - 1/2 cup
- Chicken broth - 2 cups
- Tomato sauce - 1 cup
- Potatoes - 4, peeled and cubed
- Carrots - 2, sliced
- Bell pepper - 1, chopped
- Garlic - 4 cloves, minced
- Onion - 1 large, chopped
- Chicken - 1.5 kg, cut into pieces
Let's Get Started
- In a large pot, heat the olive oil over medium heat.
- Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the onion, garlic, bell pepper, carrots, and potatoes. Cook until the vegetables are slightly softened.
- Return the chicken to the pot and add the tomato sauce, chicken broth, white wine, bay leaves, oregano, cumin, salt, and pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 45 minutes, or until the chicken is cooked through and the vegetables are tender.
- Add the green olives and cilantro to the pot. Stir well and cook for an additional 5 minutes.
- Serve the Fricasé de Pollo hot with rice or crusty bread.
