Finnish Fish Soup
This traditional Finnish fish soup is made with fresh fish, vegetables, and a creamy broth.
Ingredients - Serves 6
- Salt and pepper - To taste
- Dill - 2 tablespoons, chopped
- Heavy cream - 1 cup
- Fish stock - 4 cups
- Butter - 2 tablespoons
- Leek - 1, sliced
- Onion - 1 medium, chopped
- Carrots - 2 medium, peeled and diced
- Potatoes - 2 medium, peeled and diced
- Fish fillets - 1 lb, boneless and skinless
Let's Get Started
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and sliced leek. Cook until softened, about 5 minutes.
- Add the diced potatoes and carrots. Cook for another 5 minutes.
- Pour in the fish stock and bring to a boil. Reduce heat and simmer for 15 minutes, or until the vegetables are tender.
- Cut the fish fillets into bite-sized pieces and add them to the pot. Cook for 5 minutes, or until the fish is cooked through.
- Stir in the heavy cream and chopped dill. Season with salt and pepper to taste.
- Simmer for another 5 minutes to allow the flavors to meld together.
- Serve hot and garnish with additional dill, if desired.
