Finnish Fish Soup

Ingredients - Serves 6

Let's Get Started

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and sliced leek. Cook until softened, about 5 minutes.
  3. Add the diced potatoes and carrots. Cook for another 5 minutes.
  4. Pour in the fish stock and bring to a boil. Reduce heat and simmer for 15 minutes, or until the vegetables are tender.
  5. Cut the fish fillets into bite-sized pieces and add them to the pot. Cook for 5 minutes, or until the fish is cooked through.
  6. Stir in the heavy cream and chopped dill. Season with salt and pepper to taste.
  7. Simmer for another 5 minutes to allow the flavors to meld together.
  8. Serve hot and garnish with additional dill, if desired.
