Fig and Walnut Granola
This homemade granola is packed with the flavors of sweet figs and crunchy walnuts. It's perfect for breakfast or as a healthy snack.
Ingredients - Serves 8
- Salt - 1/4 teaspoon
- Vanilla extract - 1 teaspoon
- Cinnamon - 1 teaspoon
- Coconut oil - 1/4 cup, melted
- Honey - 1/4 cup
- Dried figs - 1 cup, chopped
- Walnuts - 1 cup, chopped
- Rolled oats - 3 cups
Let's Get Started
- Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, chopped walnuts, and chopped dried figs.
- In a separate small bowl, whisk together the honey, melted coconut oil, cinnamon, vanilla extract, and salt.
- Pour the honey mixture over the oat mixture and stir until everything is well coated.
- Spread the granola mixture evenly onto the prepared baking sheet.
- Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown and crispy.
