Febo Kroket

Ingredients - Serves 4

Let's Get Started

  1. Melt the butter in a saucepan over medium heat. Stir in the flour to make a roux.
  2. Gradually whisk in the beef broth until smooth. Cook and stir until the mixture comes to a boil and thickens.
  3. Soak the gelatin in cold water for 5 minutes, then squeeze out the excess water and stir it into the hot roux until dissolved.
  4. Stir in the chopped beef, nutmeg, salt, and pepper. Let the mixture cool and then refrigerate until firm.
  5. Shape the chilled mixture into logs. Dip each log into the beaten eggs, then roll in the breadcrumbs to coat.
  6. Heat the vegetable oil in a deep fryer or large saucepan to 375°F (190°C).
  7. Fry the croquettes in the hot oil until golden brown, about 4 minutes. Drain on paper towels before serving.
