Febo Kroket
A popular Dutch snack, the Febo Kroket is a deep-fried roll with a meat ragout filling. It's crispy on the outside and creamy on the inside.
Ingredients - Serves 4
- Vegetable oil - For deep frying
- Breadcrumbs - 200 grams
- Eggs - 2, beaten
- Salt and pepper - To taste
- Nutmeg - 1/2 teaspoon
- Cooked beef - 200 grams, finely chopped
- Gelatin - 12 grams
- Beef broth - 500 ml
- Flour - 60 grams
- Butter - 50 grams
Let's Get Started
- Melt the butter in a saucepan over medium heat. Stir in the flour to make a roux.
- Gradually whisk in the beef broth until smooth. Cook and stir until the mixture comes to a boil and thickens.
- Soak the gelatin in cold water for 5 minutes, then squeeze out the excess water and stir it into the hot roux until dissolved.
- Stir in the chopped beef, nutmeg, salt, and pepper. Let the mixture cool and then refrigerate until firm.
- Shape the chilled mixture into logs. Dip each log into the beaten eggs, then roll in the breadcrumbs to coat.
- Heat the vegetable oil in a deep fryer or large saucepan to 375°F (190°C).
- Fry the croquettes in the hot oil until golden brown, about 4 minutes. Drain on paper towels before serving.
