Fava Bean and Roasted Tomato Bruschetta
This delicious bruschetta is made with fresh fava beans, roasted tomatoes, and crusty bread.
Ingredients - Serves 6
- Baguette - 1, sliced
- Salt and pepper - To taste
- Fresh basil - 1/4 cup, chopped
- Balsamic vinegar - 1 tablespoon
- Olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Cherry tomatoes - 1 pint
- Fava beans - 2 cups, shelled
Let's Get Started
- Preheat the oven to 400°F.
- Place the cherry tomatoes on a baking sheet and drizzle with 1 tablespoon of olive oil. Season with salt and pepper.
- Roast the tomatoes in the oven for 15-20 minutes, or until they start to burst and caramelize.
- Meanwhile, bring a pot of salted water to a boil. Add the shelled fava beans and cook for 2-3 minutes. Drain and rinse with cold water.
- Remove the outer skin from the fava beans by gently squeezing them. Set aside.
- In a small bowl, whisk together the minced garlic, balsamic vinegar, 2 tablespoons of olive oil, salt, and pepper.
- In a large bowl, combine the roasted tomatoes, fava beans, and chopped basil. Pour the dressing over the mixture and toss to coat.
- Toast the baguette slices until golden and crispy.
- Top each slice of toasted baguette with the fava bean and roasted tomato mixture.
- Serve immediately and enjoy!
