Fava Bean and Roasted Tomato Bruschetta

Let's Get Started

  1. Preheat the oven to 400°F.
  2. Place the cherry tomatoes on a baking sheet and drizzle with 1 tablespoon of olive oil. Season with salt and pepper.
  3. Roast the tomatoes in the oven for 15-20 minutes, or until they start to burst and caramelize.
  4. Meanwhile, bring a pot of salted water to a boil. Add the shelled fava beans and cook for 2-3 minutes. Drain and rinse with cold water.
  5. Remove the outer skin from the fava beans by gently squeezing them. Set aside.
  6. In a small bowl, whisk together the minced garlic, balsamic vinegar, 2 tablespoons of olive oil, salt, and pepper.
  7. In a large bowl, combine the roasted tomatoes, fava beans, and chopped basil. Pour the dressing over the mixture and toss to coat.
  8. Toast the baguette slices until golden and crispy.
  9. Top each slice of toasted baguette with the fava bean and roasted tomato mixture.
  10. Serve immediately and enjoy!
