Fava Bean and Pecorino Crostini
These delicious crostini are topped with creamy fava beans and tangy pecorino cheese.
Ingredients - Serves 6
- Salt and pepper - To taste
- Lemon zest - 1 teaspoon
- Fresh mint leaves - 1/4 cup, chopped
- Pecorino cheese - 1/2 cup, grated
- Garlic - 2 cloves, minced
- Extra virgin olive oil - 3 tablespoons
- Baguette - 1, sliced
- Fava beans - 2 cups, shelled
Let's Get Started
- Bring a pot of salted water to a boil. Add the fava beans and cook for 2-3 minutes. Drain and transfer to a bowl of ice water to cool. Peel off the outer skins of the beans.
- Preheat the oven to 375°F.
- Brush the baguette slices with olive oil and place them on a baking sheet. Bake for 8-10 minutes, or until golden and crispy.
- In a bowl, combine the peeled fava beans, minced garlic, grated pecorino cheese, chopped mint leaves, lemon zest, salt, and pepper. Mix well to combine.
- Spread the fava bean mixture onto the toasted baguette slices.
