Fava Bean and Basil Salad
This refreshing salad combines fava beans, fresh basil, and a tangy lemon dressing.
Ingredients - Serves 4
- Salt and pepper - To taste
- Extra virgin olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Red onion - 1/4 cup, thinly sliced
- Cherry tomatoes - 1 cup, halved
- Fresh basil leaves - 1 cup, chopped
- Fava beans - 2 cups, shelled

- Bring a pot of salted water to a boil. Add the fava beans and cook for 2-3 minutes, until tender. Drain and rinse with cold water.
- Remove the outer skin from the fava beans by gently squeezing them. Discard the skins.
