Ingredients - Serves 4

Let's Get Started

  1. Preheat your grill to medium-high heat.
  2. Brush the vegetables with 2 tablespoons of the olive oil and season with salt and pepper.
  3. Place the vegetables on the grill and cook for about 15 minutes, turning occasionally, until they are soft and charred.
  4. Remove the vegetables from the grill and let them cool.
  5. Once the vegetables are cool enough to handle, peel the skin off and remove any seeds.
  6. Slice the vegetables into thin strips and arrange them on a platter.
  7. Drizzle the remaining 2 tablespoons of olive oil over the vegetables and season with more salt and pepper if desired.
  8. Serve the escalivada at room temperature.
