Escalivade
Escalivada is a traditional Catalan dish of smoky grilled vegetables. It's a simple yet flavorful dish that can be served as a main course or a side dish.
Ingredients - Serves 4
- Black pepper - To taste
- Salt - To taste
- Olive oil - 4 tablespoons
- Tomatoes - 2
- Onions - 2
- Red bell peppers - 2
- Eggplant - 2 large
Let's Get Started
- Preheat your grill to medium-high heat.
- Brush the vegetables with 2 tablespoons of the olive oil and season with salt and pepper.
- Place the vegetables on the grill and cook for about 15 minutes, turning occasionally, until they are soft and charred.
- Remove the vegetables from the grill and let them cool.
- Once the vegetables are cool enough to handle, peel the skin off and remove any seeds.
- Slice the vegetables into thin strips and arrange them on a platter.
- Drizzle the remaining 2 tablespoons of olive oil over the vegetables and season with more salt and pepper if desired.
- Serve the escalivada at room temperature.
