English Tea Sandwiches
These traditional English tea sandwiches are perfect for afternoon tea or a light lunch. They are made with soft white bread and a variety of fillings.
Ingredients - Serves 4
- Salt and pepper - To taste
- Mayonnaise - 2 tablespoons
- Egg - 2, hard-boiled and sliced
- Cream cheese - 4 ounces
- Smoked salmon - 4 ounces
- Cucumber - 1, thinly sliced
- Butter - 4 tablespoons, softened
- White bread - 8 slices
Let's Get Started
- Spread a thin layer of butter on one side of each slice of bread.
- On four of the slices, arrange the cucumber slices in a single layer. Season with salt and pepper.
- On the other four slices, spread a layer of cream cheese and top with smoked salmon.
- Place the slices with cucumber on top of the slices with salmon, buttered side down.
- Trim the crusts off the sandwiches and cut each one into four triangles.
- Serve immediately, or cover with a damp paper towel and refrigerate until ready to serve.
