Eight Treasure Duck
Eight Treasure Duck is a traditional Chinese dish known for its rich flavors and presentation. The duck is stuffed with a variety of ingredients, hence the name 'eight treasures'.
Ingredients - Serves 6
- Five spice powder - 1 teaspoon
- Sugar - 1 teaspoon
- Soy sauce - 2 tablespoons
- Salt - 1 teaspoon
- Lotus seeds - 1/2 cup, soaked and cooked
- Chestnuts - 8, cooked and peeled
- Dried oysters - 8, soaked
- Dried scallops - 8, soaked and shredded
- Dried shiitake mushrooms - 8, soaked and diced
- Chinese sausage - 2, diced
- Cooked sticky rice - 2 cups
- Whole duck - 1 (about 5 pounds)
Let's Get Started
- Clean the duck and pat dry. Rub the duck inside and out with salt.
- In a large bowl, mix the cooked sticky rice, diced Chinese sausage, diced shiitake mushrooms, shredded scallops, oysters, chestnuts, and lotus seeds.
- Stuff the duck with the rice mixture.
- Sew the duck's cavity shut using kitchen string and a needle.
- In a small bowl, mix the soy sauce, sugar, and five spice powder. Rub this mixture all over the duck.
- Place the duck on a rack in a roasting pan. Roast in a preheated oven at 350°F for about 2 hours, or until the duck is cooked through and the skin is crispy.
- Let the duck rest for 15 minutes before cutting into it. Serve hot.
