Let's Get Started

  1. Clean the duck and pat dry. Rub the duck inside and out with salt.
  2. In a large bowl, mix the cooked sticky rice, diced Chinese sausage, diced shiitake mushrooms, shredded scallops, oysters, chestnuts, and lotus seeds.
  3. Stuff the duck with the rice mixture.
  4. Sew the duck's cavity shut using kitchen string and a needle.
  5. In a small bowl, mix the soy sauce, sugar, and five spice powder. Rub this mixture all over the duck.
  6. Place the duck on a rack in a roasting pan. Roast in a preheated oven at 350°F for about 2 hours, or until the duck is cooked through and the skin is crispy.
  7. Let the duck rest for 15 minutes before cutting into it. Serve hot.
