Egusi Soup
Egusi soup is a popular Nigerian dish made with ground melon seeds and various vegetables.
Ingredients - Serves 6
- Pepper - To taste
- Salt - To taste
- Seasoning cubes - 2
- Ground crayfish - 2 tablespoons
- Stock or water - 4 cups
- Meat (beef, chicken, or fish) - 1 pound, cut into small pieces
- Spinach - 2 cups, chopped
- Bell peppers - 2 medium, chopped
- Tomatoes - 2 medium, chopped
- Onion - 1 medium, chopped
- Palm oil - 1/2 cup
- Egusi (melon) seeds - 1 cup
Let's Get Started
- Grind the egusi seeds in a blender or food processor until smooth.
- Heat the palm oil in a large pot over medium heat.
- Add the chopped onions and sauté until translucent.
- Add the chopped tomatoes and bell peppers and cook for 5 minutes.
- Add the ground egusi seeds and stir well to combine with the vegetables.
- Add the meat pieces and cook until browned.
- Pour in the stock or water and bring to a boil.
- Reduce the heat and simmer for 20 minutes, or until the meat is tender.
- Add the chopped spinach, ground crayfish, seasoning cubes, salt, and pepper.
- Stir well and simmer for an additional 5 minutes.
- Taste and adjust the seasoning if needed.
- Serve hot with your choice of swallow (e.g., pounded yam, eba, or fufu).
