Ingredients - Serves 6

Let's Get Started

  1. Grind the egusi seeds in a blender or food processor until smooth.
  2. Heat the palm oil in a large pot over medium heat.
  3. Add the chopped onions and sauté until translucent.
  4. Add the chopped tomatoes and bell peppers and cook for 5 minutes.
  5. Add the ground egusi seeds and stir well to combine with the vegetables.
  6. Add the meat pieces and cook until browned.
  7. Pour in the stock or water and bring to a boil.
  8. Reduce the heat and simmer for 20 minutes, or until the meat is tender.
  9. Add the chopped spinach, ground crayfish, seasoning cubes, salt, and pepper.
  10. Stir well and simmer for an additional 5 minutes.
  11. Taste and adjust the seasoning if needed.
  12. Serve hot with your choice of swallow (e.g., pounded yam, eba, or fufu).
