Edamame Quinoa Salad

Ingredients - Serves 4

Let's Get Started

  1. Rinse the quinoa under cold water and drain.
  2. In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover and simmer until quinoa is tender and water has been absorbed, about 15 minutes.
  3. In a large bowl, combine the cooked quinoa, edamame, red bell pepper, carrot, and green onions.
  4. In a small bowl, whisk together the sesame oil, soy sauce, and honey.
  5. Pour the dressing over the quinoa mixture and toss to combine.
  6. Sprinkle with sesame seeds before serving.
