Edamame Broccoli Rice Bowl
A healthy and delicious bowl filled with green veggies and a hint of savory soy sauce.
Ingredients - Serves 2
- Sesame seeds - 1 tablespoon
- Green onions - 2, sliced
- Garlic - 2 cloves, minced
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Edamame - 1 cup, shelled
- Broccoli - 1 head, cut into florets
- Water - 2 cups
- Brown rice - 1 cup
Let's Get Started
- In a pot, bring the brown rice and water to a boil. Reduce heat to low, cover, and simmer for 45 minutes.
- In a large pan, heat the sesame oil over medium heat. Add the garlic and cook until fragrant.
- Add the broccoli and edamame to the pan and stir-fry for 5 minutes.
- Stir in the soy sauce and cook for another 2 minutes.
- Serve the vegetable mixture over the cooked rice. Top with green onions and sesame seeds.
