Dan Bing is a popular Taiwanese breakfast food that is often served with soy milk. It's a thin crepe with egg and fillings that are rolled up and sliced.
Ingredients - Serves 2
- Vegetable oil - 2 tablespoons
- Salt - 1/4 teaspoon
- Green onions - 2, chopped
- Eggs - 2
- Water - 1/2 cup
- All-purpose flour - 1/2 cup
Let's Get Started
- In a bowl, mix the flour and water until smooth to make the crepe batter.
- In another bowl, beat the eggs and mix in the chopped green onions and salt.
- Heat a non-stick pan over medium heat and add 1 tablespoon of oil.
- Pour half of the crepe batter into the pan and spread it into a thin layer.
- Pour half of the egg mixture on top of the crepe and spread it out evenly.
- When the bottom of the crepe is golden, flip it over and cook the other side until the egg is fully cooked.
- Roll the crepe up in the pan and transfer it to a cutting board. Slice it into bite-sized pieces.
- Repeat with the remaining batter and egg mixture.
- Serve hot with soy sauce or chili sauce for dipping.
