Daifuku
Daifuku is a traditional Japanese sweet consisting of a soft mochi shell filled with sweet red bean paste.
Ingredients - Serves 12
- Potato starch or cornstarch - 1/4 cup
- Sweet red bean paste - 1 cup
- Water - 3/4 cup
- Sugar - 1/4 cup
- Glutinous rice flour - 1 cup
Let's Get Started
- In a microwave-safe bowl, combine the glutinous rice flour, sugar, and water. Mix well.
- Cover the bowl with plastic wrap and microwave on high for 2 minutes.
- Remove from the microwave and stir the mixture with a wet spatula.
- Cover the bowl again and microwave for another 1 minute.
- Remove from the microwave and stir until the mixture becomes smooth and elastic.
- Dust a clean surface with potato starch or cornstarch.
- Transfer the mochi mixture onto the dusted surface and knead it gently until it becomes smooth.
- Divide the mochi into 12 equal portions.
- Take one portion of mochi and flatten it with your hands.
- Place a small amount of sweet red bean paste in the center of the flattened mochi.
- Gather the edges of the mochi and pinch them together to seal the filling.
- Roll the mochi between your palms to form a smooth ball.
- Repeat the process with the remaining mochi portions and sweet red bean paste.
- Serve the daifuku immediately or store in an airtight container.
