Cuchinta
Cuchinta is a Filipino steamed rice cake made with rice flour and brown sugar. It has a soft and chewy texture, and is often enjoyed as a snack or dessert.
Ingredients - Serves 12
- Grated coconut - 1 cup
- Lye water - 1 teaspoon
- Water - 2 cups
- Brown sugar - 1 cup
- Rice flour - 2 cups
Let's Get Started
- In a mixing bowl, combine the rice flour, brown sugar, water, and lye water. Mix well until the sugar is dissolved.
- Grease the molds or cupcake liners with oil or cooking spray.
- Pour the batter into the molds, filling each about 3/4 full.
- Prepare a steamer and bring the water to a boil.
- Place the molds in the steamer and steam for about 20-25 minutes, or until a toothpick inserted comes out clean.
- Remove from the steamer and let cool for a few minutes.
- Once cooled, remove the cuchinta from the molds and roll them in grated coconut.
- Serve and enjoy!
