Cuban Black Beans and Rice

Ingredients - Serves 4

  1. Rinse the black beans and soak in 4 cups of water overnight.
  2. Drain the beans and set aside.
  3. Heat the olive oil in a large pot over medium heat.
  4. Add the onion, bell pepper, and garlic and cook until the vegetables are soft, about 5 minutes.
