Cuban Black Beans and Rice
A traditional Cuban dish, this hearty meal features flavorful black beans served over fluffy white rice.
Ingredients - Serves 4
- White rice - 2 cups
- Salt and pepper - To taste
- Oregano - 1 teaspoon
- Cumin - 1 teaspoon
- Bay leaves - 2
- Garlic - 4 cloves, minced
- Green bell pepper - 1, chopped
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Water - 4 cups
- Dried black beans - 1 cup
Let's Get Started
- Rinse the black beans and soak in 4 cups of water overnight.
- Drain the beans and set aside.
- Heat the olive oil in a large pot over medium heat.
- Add the onion, bell pepper, and garlic and cook until the vegetables are soft, about 5 minutes.
- Add the beans, bay leaves, cumin, oregano, salt, and pepper to the pot.
- Cover with water and bring to a boil.
- Reduce the heat to low, cover, and simmer for 2 hours, or until the beans are tender.
- While the beans are cooking, cook the rice according to the package instructions.
- Serve the beans over the cooked rice.
