Crispy Roast Duck

Ingredients - Serves 4

Let's Get Started

  1. Preheat your oven to 300°F (150°C).
  2. Rinse the duck inside and out, and pat dry. Cut off excess fat.
  3. Prick the skin all over with a sharp knife, especially the breast and thighs, being careful not to cut into the meat.
  4. Season the duck inside and out with salt and pepper.
  5. Stuff the cavity with the garlic, thyme, rosemary, and orange quarters.
  6. Place the duck breast side up on a rack in a roasting pan.
  7. Roast for 3 hours, or until the skin is crispy and the meat is cooked through.
  8. Let the duck rest for 15 minutes before carving and serving.
