Creamy Wild Rice and Mushroom Soup
A hearty and comforting soup made with wild rice, mushrooms, and cream.
Ingredients - Serves 6
- Parsley - 1 tablespoon, chopped
- Salt and pepper - To taste
- Heavy cream - 1 cup
- Chicken broth - 4 cups
- Wild rice - 1 cup
- Mushrooms - 1 pound, sliced
- Garlic - 2 cloves, minced
- Onions - 1 large, diced
- Butter - 2 tablespoons
Let's Get Started
- Melt the butter in a large pot over medium heat.
- Add the onions and garlic and cook until the onions are soft, about 5 minutes.
- Add the mushrooms and cook until they are soft and browned, about 10 minutes.
- Add the wild rice and chicken broth. Bring to a boil, then reduce the heat and simmer until the rice is tender, about 45 minutes.
- Stir in the heavy cream and season with salt and pepper. Cook for an additional 5 minutes.
- Serve the soup hot, garnished with chopped parsley.
