Creamy Wild Rice and Mushroom Soup

Let's Get Started

  1. Melt the butter in a large pot over medium heat.
  2. Add the onions and garlic and cook until the onions are soft, about 5 minutes.
  3. Add the mushrooms and cook until they are soft and browned, about 10 minutes.
  4. Add the wild rice and chicken broth. Bring to a boil, then reduce the heat and simmer until the rice is tender, about 45 minutes.
  5. Stir in the heavy cream and season with salt and pepper. Cook for an additional 5 minutes.
