Creamy Scalloped Corn
A delicious and creamy side dish that's perfect for any meal. This scalloped corn is easy to make and full of flavor.
Ingredients - Serves 6
- Crushed saltine crackers - 1/2 cup
- Eggs - 2 large, lightly beaten
- Whole kernel corn - 1 can (15-1/4 ounces), drained
- Creamed corn - 1 can (14-3/4 ounces)
- Milk - 1 cup
- Pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- All-purpose flour - 2 tablespoons
- Onion - 1 small, finely chopped
- Butter - 2 tablespoons
Let's Get Started
- Preheat oven to 350°.
- In a large saucepan, melt butter over medium heat. Add onion; cook and stir until tender, 2-3 minutes.
- Stir in flour, salt and pepper until blended; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes.
- Remove from heat. Stir in corn and eggs. Transfer to a greased 1-1/2-qt. baking dish. Sprinkle with crackers.
- Bake, uncovered, until a knife inserted in the center comes out clean, 45-50 minutes. Let stand 5-10 minutes before serving.
