Creamy Scalloped Corn

Ingredients - Serves 6

  1. Preheat oven to 350°.
  2. In a large saucepan, melt butter over medium heat. Add onion; cook and stir until tender, 2-3 minutes.
  3. Stir in flour, salt and pepper until blended; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes.
  4. Remove from heat. Stir in corn and eggs. Transfer to a greased 1-1/2-qt. baking dish. Sprinkle with crackers.
  5. Bake, uncovered, until a knife inserted in the center comes out clean, 45-50 minutes. Let stand 5-10 minutes before serving.
