Cottage Cheese and Veggie Omelet

Let's Get Started

  1. In a bowl, beat the eggs and cottage cheese together until well combined.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Add the bell pepper, tomato, and spinach to the skillet and sauté for 2-3 minutes, until the vegetables are slightly softened.
  4. Pour the egg mixture over the vegetables in the skillet.
  5. Cook for 3-4 minutes, or until the edges of the omelet start to set.
  6. Gently lift the edges of the omelet with a spatula and tilt the skillet to allow the uncooked eggs to flow to the edges.
  7. Continue cooking for another 2-3 minutes, or until the omelet is set but still slightly moist on top.
  8. Fold the omelet in half and cook for an additional 1-2 minutes to melt the cheese and finish cooking the eggs.
  9. Season with salt and pepper to taste.
  10. Serve hot and enjoy!
