Cottage Cheese and Veggie Omelet
This healthy and delicious omelet is packed with cottage cheese and fresh vegetables.
Ingredients - Serves 2
- Olive oil - 1 tablespoon
- Salt and pepper - To taste
- Spinach - 1 cup, chopped
- Tomato - 1, diced
- Bell pepper - 1/2, diced
- Cottage cheese - 1/2 cup
- Eggs - 4
Let's Get Started
- In a bowl, beat the eggs and cottage cheese together until well combined.
- Heat olive oil in a non-stick skillet over medium heat.
- Add the bell pepper, tomato, and spinach to the skillet and sauté for 2-3 minutes, until the vegetables are slightly softened.
- Pour the egg mixture over the vegetables in the skillet.
- Cook for 3-4 minutes, or until the edges of the omelet start to set.
- Gently lift the edges of the omelet with a spatula and tilt the skillet to allow the uncooked eggs to flow to the edges.
- Continue cooking for another 2-3 minutes, or until the omelet is set but still slightly moist on top.
- Fold the omelet in half and cook for an additional 1-2 minutes to melt the cheese and finish cooking the eggs.
- Season with salt and pepper to taste.
