  1. Place the cotechino in a pot, cover with water, and simmer for about 2 hours.
  2. In another pot, heat some olive oil and sauté the onion, carrot, celery, and garlic until soft.
  3. Add the tomato paste and stir well.
  4. Add the lentils, white wine, rosemary, salt, and pepper. Cover with water and simmer for about 40 minutes, or until the lentils are tender.
  5. Once the cotechino is cooked, remove from the water, let it cool slightly, and then slice it.
  6. Serve the cotechino slices on top of the lentils.
