- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Sesame oil - 1 tablespoon
- Honey - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Soy sauce - 2 tablespoons
- Lime - 1, juiced
- Sesame seeds - 1 tablespoon
- Fresh cilantro - 1/4 cup, chopped
- Green onions - 2, thinly sliced
- Red bell pepper - 1, thinly sliced
- Carrot - 1, julienned
- Cucumber - 1, thinly sliced
- Ramen noodles - 2 packs
Let's Get Started
- Cook the ramen noodles according to package instructions. Drain and rinse with cold water to cool them down.
- In a large bowl, combine the cucumber, carrot, red bell pepper, green onions, and cilantro.
- In a small bowl, whisk together the lime juice, soy sauce, rice vinegar, honey, sesame oil, garlic, and ginger to make the dressing.
