Claypot Rice
Claypot rice is a delicious and comforting one-pot meal made with rice, marinated meat, and vegetables.
Ingredients - Serves 4
- Black pepper - To taste
- Salt - To taste
- Green onions - 4, chopped
- Chicken broth - 2 cups
- Dark soy sauce - 1 tablespoon
- Oyster sauce - 1 tablespoon
- Soy sauce - 2 tablespoons
- Ginger - 1-inch piece, minced
- Garlic - 4 cloves, minced
- Shiitake mushrooms - 8, sliced
- Chinese sausage - 2, sliced
- Chicken thighs - 4, boneless and skinless, cut into bite-sized pieces
- Jasmine rice - 2 cups
Let's Get Started
- Rinse the jasmine rice under cold water until the water runs clear. Drain well.
- In a large bowl, combine the chicken thighs, Chinese sausage, shiitake mushrooms, minced garlic, minced ginger, soy sauce, oyster sauce, and dark soy sauce. Mix well and let marinate for 15 minutes.
- Heat a claypot or a large, heavy-bottomed pot over medium heat. Add the marinated meat mixture and cook until the chicken is browned and cooked through.
- Add the rinsed jasmine rice to the pot and stir to combine with the meat mixture.
- Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover the pot, and let simmer for 20 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove the pot from the heat and let it rest, covered, for 5 minutes.
- Fluff the rice with a fork and season with salt and black pepper to taste.
- Garnish with chopped green onions before serving.
