Chorreadas
Chorreadas are Costa Rican corn pancakes, sweet or savory, and are a popular side dish or breakfast item in Costa Rica.
Ingredients - Serves 4
- Butter - 2 tablespoons
- Salt - 1/2 teaspoon
- Sugar - 1/4 cup
- All-purpose flour - 1/2 cup
- Eggs - 2
- Fresh corn kernels - 2 cups
Let's Get Started
- In a blender, combine the corn kernels and eggs and blend until smooth.
- In a separate bowl, combine the flour, sugar, and salt.
- Pour the corn mixture into the dry ingredients and stir to combine.
- Heat the butter in a large skillet over medium heat.
- Pour 1/4 cup of the batter into the skillet for each pancake.
- Cook until the edges are set and the bottom is golden, about 2 minutes.
- Flip and cook until the other side is golden, about 2 more minutes.
- Serve warm with your choice of toppings.
