Let's Get Started

  1. In a blender, combine the corn kernels and eggs and blend until smooth.
  2. In a separate bowl, combine the flour, sugar, and salt.
  3. Pour the corn mixture into the dry ingredients and stir to combine.
  4. Heat the butter in a large skillet over medium heat.
  5. Pour 1/4 cup of the batter into the skillet for each pancake.
  6. Cook until the edges are set and the bottom is golden, about 2 minutes.
  7. Flip and cook until the other side is golden, about 2 more minutes.
  8. Serve warm with your choice of toppings.
