Chorizo and White Bean Stew
This hearty and flavorful stew combines spicy chorizo sausage with creamy white beans for a satisfying meal.
Ingredients - Serves 6
- Lime - 1, juiced
- Fresh cilantro - 2 tablespoons, chopped
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Chicken broth - 2 cups
- Diced tomatoes - 1 can (14.5 ounces)
- Canned white beans - 2 cans (15 ounces each), drained and rinsed
- Bell pepper - 1, diced
- Garlic - 3 cloves, minced
- Onion - 1, chopped
- Chorizo sausage - 1 pound, sliced
Let's Get Started
- In a large pot, cook the chorizo sausage over medium heat until browned. Remove from the pot and set aside.
- In the same pot, add the chopped onion, minced garlic, and diced bell pepper. Cook until the vegetables are softened, about 5 minutes.
- Add the drained and rinsed white beans, diced tomatoes, chicken broth, paprika, cumin, salt, and pepper to the pot. Stir to combine.
- Bring the stew to a boil, then reduce the heat and simmer for 30 minutes to allow the flavors to meld together.
- Add the cooked chorizo sausage back to the pot and simmer for an additional 5 minutes.
- Remove the pot from the heat and stir in the chopped cilantro and lime juice.
- Serve the chorizo and white bean stew hot, garnished with additional cilantro if desired.
