- Cilantro - For garnish
- Cheddar cheese - 1 cup, shredded
- Salt and pepper - To taste
- Garlic - 2 cloves, minced
- Bell pepper - 1, chopped
- Onion - 1, chopped
- Eggs - 8
- Chorizo - 1 pound
Let's Get Started
- In a large skillet, cook the chorizo over medium heat until it is browned and fully cooked.
- Remove the chorizo from the skillet and set it aside.
- In the same skillet, add the onion, bell pepper, and garlic. Cook until the vegetables are softened.
- In a separate bowl, whisk the eggs and season with salt and pepper.
- Pour the eggs into the skillet with the vegetables and cook until the eggs are scrambled and fully cooked.
- Add the cooked chorizo back into the skillet and stir to combine.
- Sprinkle the shredded cheese over the top and cover the skillet until the cheese is melted.
- Garnish with cilantro before serving.
