Let's Get Started

  1. In a large skillet, cook the chorizo over medium heat until it is browned and fully cooked.
  2. Remove the chorizo from the skillet and set it aside.
  3. In the same skillet, add the onion, bell pepper, and garlic. Cook until the vegetables are softened.
  4. In a separate bowl, whisk the eggs and season with salt and pepper.
  5. Pour the eggs into the skillet with the vegetables and cook until the eggs are scrambled and fully cooked.
  6. Add the cooked chorizo back into the skillet and stir to combine.
  7. Sprinkle the shredded cheese over the top and cover the skillet until the cheese is melted.
  8. Garnish with cilantro before serving.
