  1. Peel the bananas and cut them in half crosswise.
  2. Insert a popsicle stick into each banana half.
  3. Place the bananas on a baking sheet lined with parchment paper and freeze for at least 2 hours.
  4. In a microwave-safe bowl, melt the dark chocolate and coconut oil together in 30-second intervals, stirring in between, until smooth and fully melted.
  5. Remove the frozen bananas from the freezer and dip each banana half into the melted chocolate, using a spoon to coat it evenly.
  6. If desired, roll the chocolate-covered bananas in your choice of toppings.
  7. Place the coated bananas back on the parchment-lined baking sheet and return to the freezer for at least 1 hour, or until the chocolate is fully set.
  8. Once the chocolate is set, the chocolate-covered bananas are ready to be enjoyed!
