Chocolate Covered Bananas

- Coconut oil - 1 tablespoon
- Dark chocolate - 8 ounces
- Bananas - 4 ripe
Let's Get Started
- Peel the bananas and cut them in half crosswise.
- Insert a popsicle stick into each banana half.
- Place the bananas on a baking sheet lined with parchment paper and freeze for at least 2 hours.
- In a microwave-safe bowl, melt the dark chocolate and coconut oil together in 30-second intervals, stirring in between, until smooth and fully melted.
- Remove the frozen bananas from the freezer and dip each banana half into the melted chocolate, using a spoon to coat it evenly.

- Place the coated bananas back on the parchment-lined baking sheet and return to the freezer for at least 1 hour, or until the chocolate is fully set.
