Chinese Chive Pockets
Chinese Chive Pockets are a popular snack in Northern China, similar to turnovers or dumplings, filled with Chinese chives, scrambled eggs and vermicelli noodles.
Ingredients - Serves 4
- Vegetable oil - For frying
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Vermicelli noodles - 1 cup, cooked and chopped
- Eggs - 3, scrambled
- Chinese chives - 2 cups, chopped
- Salt - 1/2 teaspoon
- Water - 1 cup
- All-purpose flour - 2 cups
Let's Get Started
- In a large bowl, mix the flour, water, and salt to form a dough. Knead until smooth, then cover and let rest for 30 minutes.
- In another bowl, combine the chives, scrambled eggs, noodles, sesame oil, and soy sauce.
- Divide the dough into small pieces and roll each piece into a thin circle.
- Place a spoonful of the chive mixture in the center of each dough circle. Fold the dough over the filling and press the edges to seal.
- Heat the vegetable oil in a frying pan over medium heat. Fry the chive pockets until golden brown on both sides, about 2-3 minutes per side.
- Serve hot with soy sauce for dipping.
