Chicken Chowder
This hearty chicken chowder is packed with tender chicken, vegetables, and creamy broth.
Ingredients - Serves 6
- Fresh parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Garlic powder - 1 teaspoon
- Butter - 2 tablespoons
- All-purpose flour - 1/4 cup
- Milk - 2 cups
- Chicken broth - 4 cups
- Corn - 1 cup, frozen
- Potatoes - 2, peeled and diced
- Celery - 2 stalks, diced
- Carrots - 2, diced
- Onion - 1, diced
- Chicken breast - 2, boneless and skinless, diced
Let's Get Started
- In a large pot, melt the butter over medium heat.
- Add the diced chicken and cook until browned.
- Remove the chicken from the pot and set aside.
- In the same pot, add the diced onion, carrots, celery, and potatoes. Cook until the vegetables are tender.
- Add the chicken broth and bring to a boil.
- In a separate bowl, whisk together the milk and flour until smooth.
- Slowly pour the milk mixture into the pot, stirring constantly.
- Add the cooked chicken, corn, garlic powder, salt, and pepper. Simmer for 15 minutes.
- Garnish with fresh parsley before serving.
