Chiang Mai Noodles
Chiang Mai Noodles, also known as Khao Soi, is a popular Northern Thai dish. It is a fragrant and spicy curry noodle soup topped with crispy noodles.
Ingredients - Serves 4
- Garnish (optional) - Cilantro, lime wedges, sliced red onion, crispy fried noodles
- Garlic - 4 cloves, minced
- Shallots - 2, thinly sliced
- Vegetable oil - 2 tablespoons
- Egg noodles - 8 ounces
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1 teaspoon
- Sugar - 1 tablespoon
- Fish sauce - 2 tablespoons
- Chicken broth - 2 cups
- Coconut milk - 2 cups
- Curry paste - 3 tablespoons
- Chicken thighs - 4, bone-in
Let's Get Started
- In a large pot, heat the vegetable oil over medium heat. Add the shallots and garlic, and cook until fragrant.
- Add the curry paste, turmeric powder, cumin powder, and coriander powder. Stir well to combine.
- Add the chicken thighs and cook until browned on all sides.
- Pour in the coconut milk, chicken broth, fish sauce, and sugar. Stir well and bring to a simmer.
- Cover the pot and let the soup simmer for 30 minutes, or until the chicken is cooked through and tender.
- While the soup is simmering, cook the egg noodles according to package instructions. Drain and set aside.
- Remove the chicken thighs from the soup and shred the meat using two forks. Discard the bones.
- Return the shredded chicken to the soup and stir well.
- To serve, divide the cooked egg noodles among bowls. Ladle the soup over the noodles.
- Garnish with cilantro, lime wedges, sliced red onion, and crispy fried noodles, if desired.
