Let's Get Started

  1. Place the fish in a glass dish and cover with the lime juice. Let marinate in the refrigerator for at least 2 hours, or until the fish is opaque.
  2. Drain the fish, reserving some of the lime juice.
  3. Mix the fish with the onion, cilantro, jalapeno, and salt. Add some of the reserved lime juice to taste.
  4. Serve the ceviche on plates with the sweet potatoes and corn on the side.
