Ceviche de Pescado
A traditional Peruvian dish of marinated raw fish, served with sweet potatoes and corn.
Ingredients - Serves 4
- Salt - To taste
- Corn - 2 ears, cooked and sliced
- Sweet potatoes - 2, cooked and sliced
- Jalapeno - 1, seeded and minced
- Cilantro - 1/2 cup, chopped
- Red onion - 1, thinly sliced
- Lime juice - 1 cup
- White fish fillets - 1 pound, cut into bite-sized pieces
Let's Get Started
- Place the fish in a glass dish and cover with the lime juice. Let marinate in the refrigerator for at least 2 hours, or until the fish is opaque.
- Drain the fish, reserving some of the lime juice.
- Mix the fish with the onion, cilantro, jalapeno, and salt. Add some of the reserved lime juice to taste.
- Serve the ceviche on plates with the sweet potatoes and corn on the side.
