Cashew Tofu Stir Fry
This delicious cashew tofu stir fry is packed with flavor and protein. It's a quick and easy vegetarian dish that is perfect for a weeknight dinner.
Ingredients - Serves 4
- Cooked rice - 4 cups, for serving
- Salt and pepper - To taste
- Vegetable broth - 1/2 cup
- Cornstarch - 1 tablespoon
- Sesame oil - 1 tablespoon
- Soy sauce - 3 tablespoons
- Ginger - 1 tablespoon, minced
- Garlic - 3 cloves, minced
- Snow peas - 1 cup
- Carrot - 1, sliced
- Red bell pepper - 1, sliced
- Broccoli florets - 2 cups
- Cashews - 1/2 cup
- Firm tofu - 1 block, cubed
Let's Get Started
- In a large skillet or wok, heat the sesame oil over medium heat.
- Add the tofu cubes and cook until golden brown on all sides. Remove from the skillet and set aside.
- In the same skillet, add the garlic and ginger. Cook for 1 minute until fragrant.
- Add the broccoli, red bell pepper, carrot, and snow peas. Stir fry for 3-4 minutes until the vegetables are tender-crisp.
- In a small bowl, whisk together the soy sauce, cornstarch, and vegetable broth. Pour the sauce into the skillet with the vegetables.
- Add the cooked tofu and cashews to the skillet. Stir fry for an additional 2-3 minutes until the sauce thickens and coats the tofu and vegetables.
- Season with salt and pepper to taste.
- Serve the cashew tofu stir fry over cooked rice.
